As January is the month of resolutions, I’m doing the best I can to stay focused on mine. It’s not incredibly specific, just a general notion that I need to slow life down a bit and attempt more of a balance between social events and taking care of myself.
I feel best when I make my own food, except that I am not a particularly clever cook. I’m best at one-stop shop dishes or, even better, no cook dishes. I’ve been on a real winter salad kick lately; mixing up large batches of baby spinach and arugula, then adding citrus fruits to everything. I’ve been blending half a cup of guacamole in with the greens, cutting up a white grapefruit into chunks, and then topping with a vinaigrette and some parmesan cheese. Beets and blood oranges are another great combo to use with this dressing. I’m thinking that pineapple, pecans, and Jarlsberg might be next on the list.
I’m also very intrigued by the idea of this Ginger Syrup from Morris Kitchen, discovered via Lukas Volger. (His veggie burger book is pretty awesome, by the way. And it seems he is starting a new web series!) This really has nothing to do with salad. I just really would like to own some luxurious food items.
