Tips for making shortbread!
Ever since I found out about my gluten intolerance, I’ve missed baking! I decided to test out shortbread for the first time, using an adapted recipe from The Barefoot Contessa to whip up some Christmas presents.
What I quickly learned was that this is really a cookie that should only be attempted if you have a good mixer at hand, which I do not. There are so many dry ingredients that it’s very difficult to mix even if you have properly softened the butter. (Case in point.)
I also found that three and a half cups of flour made the dough much too dry, so I had to add an extra stick of butter and a dash more vanilla. If I make again, I’ll cut down to three cups of flour.
Chilling the dough helps tremendously. My 2nd and 3rd batches came out much better because I popped the dough in the fridge between uses of my one cookie sheet.
While these didn’t come out as nice as I would have liked, they still look pretty and taste good. And the mason jar packaging makes everything look fancy.
